Sancerre red "La Bondenotte" (AOP Sancerre)

Commune of Bué, we exploit 0.86 hectares out of the 3 hectares of this plot. “La Bondenotte” is a group of old Pinot Noir vines in clay-limestone territory. The harvest is selected, sorted and destemmed before vatting. After around fifteen days of maceration, the free-run juices are isolated and half-muid, followed by aging for 8 months. “Bondenotte” is a deep, subtle, crunchy wine with a hint of spice.

  • Winemaking

    Manual harvest, vinified from whole grapes. Skin maceration in thermoregulated stainless steel vats. Coloring of juices by pumping over. Aging in 228 L Burgundian barrels for 11 months.
  • Tasting Notes

    Wine with black fruits, with a rather dense concentration and sustained tannins. Wine to keep.
