SANCERRE – SMOKED POUILLY
The origin of the different terroirs - limestone, clay and flint, the indigenous 100 % yeasts and the slow fermentations produce wines of unique finesse and minerality with an acidity that is always extremely well integrated.
Each terroir has its own identity. These two wines express the characteristics of the limestone of Sancerre and the clay-limestone of Pouilly Fumé.
The Maison Pascal Jolivet estate has been built up over the years following the purchase of plots that are among the most beautiful terroirs of Sancerrois.
These wines are the fruit of a philosophy, an ethic
but above all the expression of two great terroirs.
Beautiful expression of Sauvignon Blanc with floral and quince notes. The minerality and suppleness of this wine are in perfect balance.
Manual harvest on 35-year-old vines. Pressing, light cold settling. Vatting in a concrete egg of 16 HL without intervention or addition of sulphur.
