Unfortunately, there is no classification or scale of wines in Sancerre. The Domaine Pascal Jolivet was built up over the years following the purchase of plots which are among the most beautiful terroirs of Sancerrois. The grapes from these plots, harvested manually, produce very concentrated juices, enhanced by natural fermentation with indigenous yeasts. Aging on fine lees is about 6 months. The very particular character of each of these plots reinforces the unique style of the Domaine's wines.
