Sauvage is a beauty, an outstanding Sauvignon Blanc made from old vines and limestone. This cuvée has a huge potential and is very dangerous (so good!). Our vision was to create a super high end cuvée from an historical parcel (planted by the monks) of flint (silex). Its name is a reminder of the wild yeast that we use for the natural fermentation (levures indigènes). #pouillyfume
