Sunrise also had an impact on bud damage.<\/p>\n<p>Spring was characterized by very heavy rainfall.<\/p>\n<p>This abundant quantity of water had a detrimental impact firstly on flowering, which was quite heterogeneous, and secondly on cryptogamic pressure, which was very high due to the establishment of mildew.<\/p>\n<p>Wet years like this one are also favorable to nutritional deficiencies such as magnesium or chlorine. As a result the plant had a slow growth due to problems with mineral assimilation.<\/p>\n<p>Despite all these climatic constraints, the plant was able to defend itself by growing fairly regularly. From July onwards the conditions completely changed which improved the vegetative balance.<\/p>\n<p>Summer temperatures were high, sometimes very high, causing a drought phenomenon which led the plant to severe water stress, sometimes to the point of blocking maturation.<\/p>\n<p>However, they were favorable to the accumulation of sugars and the development of primary aromas, fundamental for Sauvignon Blanc.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/pascaljolivet.com\/wp-content\/uploads\/2018\/03\/valentina-2016-300x452.jpg\" alt=\"\" width=\"184\" height=\"278\" \/><\/p>\n<p>The harvest at the estate began at the beginning of October and ended around October 15.<\/p>\n<p>The weather conditions were very favorable with very cool and sunny days, essential for preserving the quality of the grapes. The health status was overall very satisfactory with a potential degree of 12.5% and acidities higher than 2015 (pH 3.15 and AT 6.5g\/L).<\/p>\n<p>Sauvignon Blanc presents quite varietal aromas with notes of boxwood, blackcurrant, citrus, flowers and lemony white fruits. In the mouth the acid balance is important, which promises good aging potential. The finish is already quite persistent, also a sign of a good vintage.<\/p>\n<p>Pinot Noir was able to take advantage of the high temperatures by producing numerous aromatic precursors and a good quantity of anthocyanins during maturation. The wines have a pretty purple color, aromas of ripe red fruits and violets.
