Winemaking

The manual harvest is sorted on the vine, then a second time in the cellar. At least two thirds of the harvest are vinified as whole bunches, in truncated conical wooden vats (45 HL). The maceration takes place slowly, by pumping over which infuses our juices without seeking extraction, but finesse. The aging takes place in wooden vats for 8 months.
