Red Attitude – Pinot Noir
Pinot Noir grape variety.
Terroirs Blend of limestone and clay with flint on the terroir of Chemery in Touraine.
Maceration in destemmed harvest by pumping over. This vinification favors the subtlety of the Pinot Noir and not its concentration. Aging in temperature-controlled stainless steel vats for 7 months, the absence of aging in wood develops gourmet and fruity aromas.
Strawberry or raspberry crushed red fruits with a spicy white pepper finish.
Wine of pleasure, ideal for Moroccan salads and white meats.
Serving temperature: 12°C.
Cellaring time: 5 years.
Balance, freshness and precision: the Pascal Jolivet style
When the terroir, know-how and patience reveal and sublimate the complexities of Sauvignon Blanc and Pinot Noir.
