Unfortunately, there is neither ranking nor a crus scale within the Sancerre appellation. Domain Pascal Jolivet has been built up over years, acquiring plots amoun the best terroirs of Sancerre.
The grapes growing on these plots are harvested by hand. They produce a higly concentrated juice, accompanied by natural and indigenous yeasts, wich trigger fermentation. The maturation on fine lees lats around six mouths.The outstanding characteristics of each of these plots strengthen the unique style of Domaine's wines.
